I funghi chiodini sott’olio sono l’ideale per conservare questo fungo che si trova facilmente in grande quantità. Buoni come antipasto, ma anche per essere aggiunti ad arrosti di carne o verdure.
Nel boschetto del nonno, quello piccino piccino che poco somiglia a un vero bosco, ogni anno crescono i chiodini. Sempre nello stesso periodo e sempre in quantità.
E’ un angoletto di bosco solo nostro, in cui giocare con Jab, raccogliere legnetti per accendere il camino e andare a curiosare per capire cosa ci offre la natura.
Ogni autunno ci coccola, ci fa tornare a casa con il goloso bottino e il sorriso sul volto per tutto ciò che ci ha mostrato. La natura sa essere meravigliosa.
Se lo scorso anno sono tornate le lucciole a riempire il giardino, quest’anno abbiamo fatto amicizia con i ricci, gli scoiattoli ci hanno rubato tutte le nocciole e il picchio ha scavato tutte le cortecce degli alberi.
Ogni volta è una scoperta, ogni periodo ha le sue meraviglie.
English Version – Honey mushrooms in olive oil
Ingredients:
a box of honey mushrooms
3-4 cloves of garlic
4 peppers
2 bay leaves
a glass of vinegar
extra virgin olive oil
salt
Direction:
Clean the mushrooms by removing the hard part of the stalk (almost all in honey mushrooms) and any soil that will be attached above.
Bring to boil a large pan of salted water and pour the mushrooms. Add the cup of vinegar, a clove of garlic and a bay leaf and cook for about 15 minutes.
Drain, remove the garlic and bay leaf and place the mushrooms on a clean cloth.
Cover them and let sit for 24 hours in order to dry the excess water.
Sterilize the jars and, after 24 hours, place the mushrooms in olive oil: place on the bottom of the jars a piece of bay leaf, cover with a layer of mushrooms, 2 or 3 slices of a clove of garlic and a few pieces of chili, compact well and form another layer of mushrooms, garlic and chili. Continue to fill the jar and cover with oil. Leave some ‘space in the jar because the oil tends to leak out.
Close and leave in a dark, dry place for at least a month before tasting.
