Da una tradizione lontana: le zucchine in carpione. Una ricetta perfetta per conservare le verdure, ma anche il pesce e la carne per diversi giorni.
Mentre la vacanza procede tra ritmi blandi, bagni e qualche ora di lavoro settimanale, torno con una ricetta di verdure utile per quando l’orto ci sommerge di zucchine e non sappiamo più in che modo consumarle.
E’ il carpione, ottimo se realizzato con pesci grassi come la trota o il salmone, ma perfetto anche con le zucchine fritte.
Si conserva per diversi giorni e, anche se non troppo leggero, può essere un comodo contorno freddo da portare in spiaggia.

English Version – Marinated zucchini
Ingredients (for 6):
500 g of zucchini
an onion
2 cloves of garlic
a few leaves of sage
one bay leaf
a glass of white wine vinegar
half a glass of white wine
extra virgin olive oil
flour as needed
Direction:
Wash the zucchini and slice it. Let roll them in flour and fry in deep olive oil. Once golden, let it dry on absorbent paper.
Apart heat a little oil in a large pan with the crushed garlic and chopped onion into thin slices. Let simmer over low heat until the onion becomes transparent.
At this point add the vinegar, wine, bay leaves and half a cup of water, bring to a boil and cook for a few minutes. Also add the sage before turning off.
Arrange the zucchini in a large pan, cover with warm marinated and let cool.
Cover with plastic wrap and then let it rest in the refrigerator until the next day to flavor the zucchini well.
