Le olive della Riviera ligure, l’origano selvatico e la provola calabrese rendono questa torta salata profumata e saporita oltre che facilissima e super veloce da preparare.
Servono pochi ingredienti e nel formato strudel farcirlo e assemblarlo è ancora più facile.
Così in mezz’ora totali tra preparazione e cottura avrete uno strudel bello e pronto per un aperitivo in compagnia o magari per un pranzo in spiaggia.
Zucchini and olives strudel
Ingredients: a rectangular roll of puff pastry 2 courgettes an onion 2 tablespoons of pitted taggiasca olives 150 g of coarsely minced provola a sprinkling of oregano extra virgin olive oil salt sesame seeds to complete
Direction: Slice the onion finely and let it stew gently in a pan with a little oil. In the meantime wash and cut the zucchini into rounds and then pour them into the pan together with the onion. Brown everything and then cook for about 10 minutes on medium-low heat. You will have to bring the zucchini about halfway through cooking. Season with salt, add the Taggiasca olives, the oregano and mix everything.
Cut the provola and set aside.
Roll out the puff pastry roll and pour over the zucchini filling. Arrange it by forming a strip in the middle of the sheet. Spread over the provola and then close the strudel bringing the outer sides on the filling.
Seal and then turn the strudel so that the closure is at the bottom. Arrange it on a baking sheet covered with baking paper, then brush the surface with a little water or beaten egg if you prefer and sprinkle with sesame seeds.
With a sharp knife, make 3-4 parallel cuts and then bake in a hot oven at 190 °C. Cook for about 20-25 minutes, until completely browned.
Let it cool before cutting and serving.

Affettate finemente la cipolla e fatela stufare dolcemente in una padella con un filo d’olio.
Nel frattempo lavate e tagliate le zucchine a rondelle e poi versatele in padella insieme alla cipolla.
Fate rosolare il tutto e poi fate cuocere per circa 10 minuti a fiamma medio-bassa. Dovrete portare le zucchine a metà cottura circa.
Regolate di sale, unite le olive taggiasche, l’origano e amalgamate il tutto.
A parte tagliate la provola.
Stendete il rotolo di pasta sfoglia e versatevi sopra il ripieno di zucchine. Disponetelo formando una striscia al centro della sfoglia. Distribuitevi sopra la provola e poi chiudete lo strudel portando i lati esterni sul ripieno.
Sigillate e poi girate lo strudel in modo che la chiusura risulti in basso. Disponetelo su una teglia coperta con carta forno, poi spennellate la superficie con poca acqua oppure uovo sbattuto se preferite e cospargete con i semi di sesamo.
Con un coltello affilato praticate 3-4 taglia paralleli e poi infornate in forno caldo a 190 °C.
Fate cuocere per circa 20-25 minuti, fino a completa doratura.
